Cooking with EssExTee: Mexican Chop-suey

Feeds 1-6 people.

Brown 1-1.5lbs ground beef and some diced onions in a dutch oven or similar deep dish. Season with salt, pepper, garlic, and 2 tbsp of cumin while it cooks

Drain the beef and return to pan. Stir in a 15oz can of black beans (drained), an 8oz can of corn (drained) and one 16oz jar of salsa (not drained). Let that mix simmer covered for 10-15 minutes, stirring occasionally, and then remove from heat

Stir in one box of cooked elbow pasta, 1/2 cup shredded cheddar, and 1/2 can of ref ried beans. The beans will fight you at first but once they warm up they’ll stir easily.

Spoon into bowls and garnish with more cheese and some sour cream.

Man I need to hippify t his thread up some so here’s my lunch . C hana saag (Indian spinach & chickpeas), with soy & coconut milks in the sauce, that I like to add green peas to for more protein, and roasted carrots because my wife was like, “hey why don’t you roast those carrots, we have so many of them.” Now I’m out of carrots.

Success! I made a couple of alterations along the way:

1. A fter I put the salsa in I tasted it and it felt like it needed something. My go-to whenever something needs “something” but I don’t know what is to ad a tsp of Worcestershire sauce. I did, and it was a good addition.

2. I still felt like it didn’t have quite enough tomato flavor for my liking, so I put in a small can of tomato paste. I think next time I would add only half a can of it, because it did start heading more toward the chili side. Not a bad thing, but the tomato flavor came up a little more than I was looking for.

Still, i t turned out awesome. At first I was a little nervous because 2 tbsp of cumin seemed like a lot, but it was all good. I got a big thumbs-up from the husband.

I think I want to try a slight variation on it next time. Instead of the jar of salsa I might try a can of Ro-Tel tomatoes and the tomato paste. Or add a can of chipotle chilies with adobo sauce.

I’ll have to try the Worcestershire sauce

Cumin is one of those spices that you always need a sh itload of to get the same intensity as other spices. My rule of thumb is that once you’ve put in so much cumin that you think you’ve ruined your dish, you have half as much as you need.

Worcestershire sauce is the opposite.  1 teaspoon.  Not more.
